trust me on this one

I tried a recipe for lunch today that was delicious!  The kids and gobbled until it was gone and then asked for more.  It’s an interesting combo, but really fabulous.

One package frozen raw deveined shrimp (14 ounces)

1 tsp salt

1 tsp cinnamon

1 tsp paprika

1 bay leaf

1/3 large seedless watermelon, diced

1 avacado

1/3 cup orange juice

1 Tbsp vinegar

1 Tbsp olive oil

1 tsp honey

Fill large sauce pan with water.  Add salt, cinnamon, paprika, bay leaf and bring to a boil.  When boiling add shrimp.  Cook for a couple of minutes until shrimp is pink, but not over cooked.  When pink and tender pour into a strainer and allow to cool.

Mix together orange juice, vinegar, olive oil, honey and a dash of cinnamon.

Dice watermelon and avocado.  Add cooled shrimp (I was impatient and mine was still warm but it was just fine) and orange juice mixture.  Gently fold together all ingredients.  Serve immediately.

We ate it so fast that I didn’t even take a picture.
