Warning, overeating potential is high

This is one of my favorite go-to recipes. I had a soup like this a year ago in a restaurant. It was so delicious I came home and googled until I found something similar. This is what I came up with. We make it often and it's so yummy. Frankly I just can't get enough of this soup. Red lentils are available at Meijer. They're look more pink than red and they in the ethnic food isle. The rest of the ingredients are pretty standard.
Coconut Lentil Soup 2 small sweet potatoes, diced 2 onions, diced 2 cloves garlic, minced, 1 1/2 cups red lentils 1/2 cup green lentils 8 cups veggie stock (2 boxes) 1 teaspoon curry 1 teaspoon garam masala 1 teaspoon turmeric 1 teaspoon minced ginger 1 can coconut milk 1/4 cup shredded unsweetened coconut Cilantro Saute sweet potatoes and onion until tender. Add the rest of the ingredients and bring to boil. Simmer to reduce for 1 1/2 hours until tender and flavors blend. Serve with cilantro sprinkled on top.
